Berry Bark Recipe
Choc - Berry yoghurt bark recipe
Here at Y.V.Fresh we love quick and healthy snacks. This Choc - Berry yoghurt bark recipe is not only quick and easy to make but it is also full of protein, antioxidants and many vitamins.
For the recipe you will need:
2 cups greek yoghurt
½ cup Y.V.Fresh raspberries
½ cup Y.V.Fresh blueberries
½ cup Y.V.Fresh blackberries
Honey to taste
Cocao or Cocao nibs to sprinkle on top
½ cup Fresh almonds
1/2 cup desiccated coconut
Set oven to 150 degrees celsius. In a tray, lay out fresh almonds and then place in the oven to roast for 10 minutes or until they start to brown up. When they are ready, take out of the oven and let cool.
Lay parchment paper onto another flat tray that is cool. In a separate bowl, mix yoghurt, berries and desiccated coconut until it is thoroughly mixed.
Pour mixture onto flat tray with parchment paper and spread thick and evenly.
Take now cooled almonds, place in a plastic bag and use a blunt object to crush them up.
Top off the berry bark with cocoa or cocao nibs and the crushed almonds for an extra chocolate, nutty taste.
Place in freezer for no less than four hours.
When ready, take out of freezer and break into large chunks.
