Cherry Chocolate Muffins
Y.V.Fresh cherries are in season and what better way to start off the festive season than with cherry, chocolate muffins!
Ingredients:
2 cups self raising flour
1 egg
½ cup mixed dark and milk chocolate chips
½ cup cocoa
1 cup sugar
½ cup fresh Y.V.Fresh cherries
1 tbs vanilla extract
1 cup milk
Makes 12.
Steps
Preheat the oven to 180 degrees celcius. Grease and line a cupcake tin. Wash and cut half a cup of Y.V.Fresh cherries and place to the side.
Sift flour, cocoa and sugar into a large mixing bowl. Place in its mixer and then add milk and vanilla extract.
In a small separate bowl, crack egg and lightly whisk. Pour this into the large bowl with both the wet and dry ingredients. Place the mixer on medium setting and allow the ingredients to combine together until the mixture is smooth.
Take the mixing bowl off the stand and fold in chocolate chips and cherries.
Evenly scoop the mixture into each cupcake tin and bake for 30 minutes or until a skewer comes out clean when you poke the cupcake.
Take out of oven and place on a cooling rack.
You will have gooey, sweet and tart chocolate, cherry muffins to enjoy on a sunny day!
