BLACKBERRY PARFAIT
INGREDIENTS
Blackberry Layer:
1 ½ cups Coconut Milk
1/3 cup Chia Seeds
1 cup YV Fresh Blackberry
1 tsp Vanilla Extract
Pinch of Sea Salt
Banana Layer:
1 Banana, peeled and mashed
1 ½ cups Coconut Milk
1/3 cup Chia Seeds
1 tsp Vanilla Extract
METHOD
For the blackberry layer: Mix all ingredients together in a bowl, mashing the blackberries.
For the banana layer: Combine the coconut milk, Chia Seeds and vanilla in a bowl. Stir well, then cover and refrigerate with the berry layer.
Distribute the blackberry and banana layers between 4 small mason jars. Top with additional berries.
Seal the jars with their lids and keep refrigerated for up to 3 days.
