Chestnut Jam
The buttery meat of chestnuts and the aromatic flavour of vanilla ... Chestnut Jam is a must try. So delicious, you will be going back for more!
This jam is perfect for using in desserts or even just by itself on a piece of toast.
Ingredients:
1kg of fresh Y.V. Fresh Loose Chestnuts or 3 x Y.V. Fresh Chestnut Microwavable Pouches
Pinch of salt
1 vanilla pod, split in half
350g caster sugar
Method:
Peel the chestnuts. Use a knife to cut a deep ‘x’,
Place into boiling water for 5 min or Microwave Y.V. Fresh Pouches according to instructions.
Place the peeled chestnuts in a large pressure cooker for 30 min.
Next, put the chestnuts into a processor or blender and blend them to a fine pulp. Add a touch of water to the mixture if proving difficult to blend.
In a separate pot begin to make a syrup with sugar and water.
When the syrup is boiling, and the sugar has dissolved, add the vanilla bean and stir.
Add the chestnut purée from the food processor to the syrup and add a pinch of salt.
Boil for 10 minutes, stirring constantly.
Discard the vanilla pod and spoon the jam into jars. Screw on the lids firmly, then turn the jars upside down for one minute, flip over and allow to cool.
