SPOOKY HALLOWEEN SPIDER LOAF
If you're in need of an easy Halloween idea with ingredients you can find in your kitchen already, give this spooky spider banana bread a go!
Ingredients
1 cup of Y.V Fresh blackberries (and extra to garnish)
3 ripe bananas (1 extra banana for garnish)
1 egg or flax egg
4 tablespoon melted coconut oil
2 tablespoon rice malt syrup or honey
½ cup almond milk
2 cups rolled oats
2 teaspoon baking powder
2 tablespoon chia seeds
½ teaspoon ground cinnamon
Dash of vanilla extract
A handful of Marshmallows
Method
Preheat your oven to 180°C
Mash ripe bananas and add to a big bowl
Add all wet ingredients to the bowl and mix (coconut oil, egg, rice malt syrup or honey, milk & vanilla extract)
Blend oats in a blender to create oat flour consistency and add to the bowl
Add all remaining dry ingredients and mix well
Fold in blackberries, but don’t overmix!
Pour into a lined baking tin and for garnish slice a banana in half lengthways and slightly press into the batter before placing in the oven for 45 minutes to 1 hour (depending on oven strength)
While the cake it cooking, melt a handful of marshmallows in a microwave-safe bowl for 30 seconds or until smooth.
Let it rest in the tin for 10 minutes before removing, then place on a cooling rack for a further 10 minutes
With melted marshmallows, create cobwebs over the top of the cake
Decorate with blackberries for spidery effect
